1-In a frying pan heat corn oil and fry potatoes until golden and crispy.
2-Transfer to a paper towel and sit aside, meanwhile in a skillet heat olive oil on medium low heat, cook garlic and chili for 30 seconds then add half of the cilantro and cook until wilted.
3-Add the potato, salt and paprika, stir until all ingredients are combined, add the rest of the cilantro and serve.
